Ingredients
- Chicken (cut into pieces)
- Vegetable oil
- Onions
- Tomatoes
- Red bell peppers
- Scotch bonnet peppers (optional for heat)
- Carrots
- Green Peas
- Garlic
- Ginger
- Seasoning cubes
- Salt
- Curry powder
- Thyme
- Water or chicken stock
Preparation
- Wash and season chicken.
- Cook or fry chicken untill golden brown.
- Chop vegetables:
- Carrots
- Green beans
- Bell peppers
- Onions
Cooking Steps
- Heat vegetable oil.
- Add onions.
- Add mixed vegetables and stir-fry for 3-5 minutes.
- Add pepper mix.
- Add:
- Curry
- Thyme
- Seasoning cubes
- Salt
- Add little water or stock.
- Add chicken.
- Mix everything well.
- Allow to simmer for 5-10 minutes.
Sauce should be slightly tick not watery.
