Preparation
- Wash the rice thouroghly and parboil it untill it is 70% cooked. Drain and rinse with clean water, then set aside.
- Wash and season the chicken or shrimps with:
- Salt
- Seasoning cubes
- Curry
- Thyme
- Chop all vegetables into small pieces:
- Carrots
- Green peas
- Onions
- Bell peppers
- Sweet corn
- Prepare your ingredients and keep everything ready before you start cooking.
Cooking Steps
- Heat vegetable oil in a pan over medium heat.
- Add chopped onions and peppers, then fry for a few seconds until fragrant.
- Add a mixed vegetables and stir-fry for 3-5 minutes.
- Add the cooked chicken or shrimps and mix well.
- Add:
- Curry
- Thyme
- Seasoning cubes
- Salt
Stir everything together to combine the flavor.
- Add the parboiled rice and begin to fry, stirring continuously so it does not burn.
- Keep stirring and turning the rice so it fries evenly and mixes well with the vegetables and protein.
- If needed, add a small amount of water or stock, but do not make it too soft.
- Continue frying and stirring untill the rice is fully cooked, dry, and well combined.
- Remove from heat and serve hot.
