Okpa (Bambara Nut Pudding)
Ingredients
- Okpa flour (bambara nut flour)
- Palm oil
- Pepper
- Ground uziza seeds
- Salt
- Warm water
- Banana leaves or nylon for wrapping
Preparation
- Get okpa flour (bambara nut flour).
- In a bowl, mix flour with:
- Stir until smooth (no lumps).
- Add:
- Mix very well until it becomes a thick, smooth batter.
Cooking Steps
- Pour mixtures into nylon bags or containers.
- Tie or seal properly.
- Arrange in pot.
- Add enough water to the pot.
- Cover and cook on medium heat.
- Cook for 45-60 minutes.
- Check firmness, it should be solid and well set.
Allow to cool before eating.
