Okpa (Bambara Nut Pudding)

Preparation

  1. Get okpa flour (bambara nut flour).
  2. In a bowl, mix flour with:
  3. Stir until smooth (no lumps).
  4. Add:
  5. Mix very well until it becomes a thick, smooth batter.

Cooking Steps

  1. Pour mixtures into nylon bags or containers.
  2. Tie or seal properly.
  3. Arrange in pot.
  4. Add enough water to the pot.
  5. Cover and cook on medium heat.
  6. Cook for 45-60 minutes.
  7. Check firmness, it should be solid and well set.
  8. Allow to cool before eating.
