Ingredients
- Fresh tomatoes
- Red bell peppers
- Scotch bonnet peppers
- Onions
- Vegetable oil
- Tomato paste (optional for richer color)
- Chicken, beef, or fish
- Garlic
- Ginger
- Seasoning cubes
- Salt
- Thyme
- Curry powder
- Water or stock
Preparation
- Wash and blend:
- Fresh tomatoes
- Red bell peppers
- Scotch bonnet peppers
- Onions
- Boil the blended mixtures untill the water reduces and it becomes thick, Set aside.
- Wash and season your meat (beef/chicken/fish) with:
- salt
- Seasoning cubes
- Onions
Cook untill tender and keep the stock.
- Slice extra onions for frying.
Cooking Steps
- Heat vegetable oil in a pot.
- Add sliced onions and fry until soft.
- Add the boiled tomato mix and fry well.
- Fry until:
- Water dries up
- Oil begins to separate (very important)
- Add:
- Seasoning cubes
- Salt
- Curry
- Thyme
- Add cooked meat or fish.
- Add a little meat stock to adjust consistency.
- Stir and allow to simmer for 10-15 minutes.
Stew is ready when oil floats on top and taste is rich.
