Ingredients
- Spinach or ugu (fluted pumpkin leaves)
- Palm oil
- Tomatoes
- Red bell peppers
- Scotch bonnet peppers
- Onions
- Crayfish
- Dry fish or Stockfish
- Beef or assorted meat
- Seasoning cubes
- Salt
- Water or stock
Preparation
- Blend tomatoes, pepper, and onions.
- Wash and cut vegetables.
- Prepare meat or fish separatly.
Cooking Steps
- Heat palm oil.
- Add onions and fry slightly.
- Add blended tomato mix.
- Fry until water reduces and oil separates.
- Add:
- Crayfish
- Seasoning cubes
- Salt
- Add meat and fish.
- Add vegetables.
- Stir gently and cook for 3-5 minutes (don't overcook veggeis).
Done when vegetables are still green and fresh-looking.
